    About the demo reel answer: I think it depends on who you're sending your work to. If you know they only want 5mins then fine, you only need to capture the essence of your style. However I've found a lot of companies and my local film council (in the UK) want to see a 'body' of work. For example; I applied for short film funding last year and had to show a reel if three 'complete' short films made in the past two years etc... Like I say, it all depends on who you're sending it to. Although I don't know if that's just a UK thing.

    It also helps with your demo if you can edit the menus of the DVD, seeing as you'd probably give your potential employer a DVD of your work.

    Personalizing it as much as possible while keeping it professional is key.

    Adobe AE and Encore are great for that. Toast works too.
